NEW KINGS COFFEE MOCHA MUFFINS

Here at New Kings Coffee we love to enjoy one of our coffee bags simply brewed and exuding the aromas of a high-quality, Fairtrade roast. But what could add to the experience? What about a little treat, a mid-morning snack to keep you fuelled until lunch? 

Well, we’ve created the perfect recipe for you coffee lovers; you can use your coffee bags in your cooking as well as for your hot drink. Our choc-chip Mocha muffins are really easy to make, and give you a great sweet treat, where the flavour of our Dark Sumatran Roast subtly cuts through the light sweetness of the muffin. Not only do they taste amazing, but the coffee actually helps the muffins to rise. 

INGREDIENTS: 

  • 250g Plain Flour

  • 225ml Milk

  • 1 egg, 

  • 75g dark brown soft sugar

  • 75g caster sugar

  • 115g butter (110ml of vegetable oil for a low fat option)

  • 1 Dark roast coffee bag, 

  • A few handfuls of chocolate chips

  • A few drops of vanilla extract

  • 2 teaspoons of Baking powder 

  • A pinch of salt

METHOD: 

  1. Pre-heat the oven to 190 degrees, and lay out the paper cases in the muffin tray.

  2. Whisk together the egg and the milk.

  3. Open your coffee bag and pop it in a mug. Pour over it boiling water (just enough so the coffee bag is covered) and leave to brew for 3-5 minutes 

  4. Squeeze the coffee bag (to get maximum flavour) and then put it in the recycling. Add the coffee to the egg and milk and stir together. 

  5. Add the egg, milk, and coffee to the flour and salt and stir together until it looks like cookie dough (add a bit more flour if it’s a bit runny). Sprinkle in the choc-chips. 

  6. Lay out the cupcake cases into the cupcake baking tray, and spoon out a table spoon of mixture into each case so it’s ¾ full. 

  7. Put in the oven until they go golden brown and a skewer comes out clean (usually about 22-24 minutes)

  8. Pop them on a cooling tray, and while you’re waiting, pour yourself a cup of New Kings Coffee and then dig in and enjoy your Mocha muffin!
